Cantonese Dried Shrimp (蝦米 · haa1 mai5)
Cantonese dried shrimp are small shrimp that have been gently boiled in salt water and sun-dried to preserve their rich, savory flavor. Firm and slightly chewy in texture, they’re a beloved staple in Cantonese and Chinese kitchens, valued for their deep umami taste that enhances a wide range of dishes.

      Characteristics: small size, fragrant, more moist than American dried shrimp. Thailand is abounded with dried shrimp. Dried shrimp is used in many Asian dishes and sauces, imparting a unique umami taste. It is a good source of protein and other micronutrients such as calcium, iodine, zinc and selenium.

      Rinse: Thoroughly rinse under water to remove dirt. Soften: Briefly soak (10 min. minimum) to soften before use. Adjust time for larger sizes. Storage: Keep in a cool, dry place such as refrigerate for lasting freshness.
